But for this component you can keep it easy and buy some store bought, or you can make some homemade pesto. My basil pesto recipe is simply delicious and can be made in just minutes!
Other than the pesto, this recipe comes together as easy as collecting all the ingredients. And the ingredients list is as simple as it comes: chicken, tomatoes, olive oil, garlic, mozzarella and pesto!
For the chicken, this recipe is versatile in that you can use tenders, breasts or even thighs. If you’re going to use breasts, I suggest you pound them out a little so that they can cook more evenly.
For the rest of the ingredients, just go as fresh as you can to elevate this simply delicious dish. Just like with a caprese salad, the simplicity means each component will sing. So the more quality, the better.
one pan wonder
One of the absolute best parts of this pesto caprese chicken is that it is a one pan wonder! When I cook, there is nothing better than something delicious and simple with an easy cleanup. Make sure you have a good oven safe pan to use, like this stainless steel sauté pan.
For this dish, you’ll brown up the chicken in the pan, add in the tomatoes, garlic, and olive oil and let it roast up in the oven. Once the tomatoes start to blister, its time to add in the fresh mozzarella. After that melts, its ready to serve. Just top it off with the pesto and an optional balsamic glaze drizzle, and serve!
One Pan Pesto Caprese Chicken
Ingredients
- 2-4 chicken breasts pounded thinner, optional
- 8 oz cherry tomatoes
- 4 cloves garlic crushed
- 8 oz buffalo mozzarella pearls, or broken into smaller pieces
- 1/4 cup pesto homemade or store bought
- olive oil extra virgin
- balsamic glaze optional
- salt
- pepper
Instructions
- Preheat oven to 400 degrees.
- In an oven safe pan, heat a few table spoons of olive oil on medium high heat on the stove.
- Salt and pepper the chicken breasts. Add them to the heated pan and brown on both sides. The chicken does not need to be fully cooked, as it will finish cooking in the oven.
- Once the chicken in browned, add in the tomatoes, garlic, and in enough olive oil that it coats all the tomatoes. Salt and pepper and then add it to the preheated oven. Bake for about 30 minutes, or until the tomatoes begin to blister.
- Once the tomatoes have blistered, remove the pan from the oven and add the mozzarella in pieces over top of the chicken and tomatoes. Add the pan back to the oven and let the cheese melt and bubble.
- Remove the pan from the oven and top with the pesto and optional balsamic glaze.
- Serve with pasta or side of your choice and enjoy!
