Chicken salad is a classic, simple, crowd-pleasing dish. But this spicy spin bumps it up a couple notches! While the ingredients may seem simple, the flavor knocks it out of the park.

For the chicken, my tried and true go-to is a rotisserie chicken. That way, all of the cooking is done. All you have to do is pick the chicken meat of the bone. Generally I pick it off in big chunks, give it a rough chop and then you can either hand shred it with some forks, or speed it up with a hand or stand mixer. This is one of the best hacks for getting small shredded pieces of chicken, perfect for mixing in a chicken salad.
For this buffalo chicken salad, the buffalo sauce is truly one of the most important parts. I absolutely love Frank’s RedHot Buffalo Wing Sauce, but feel free to sub in your favorite buffalo sauce. Don’t forget, this can also be adjusted based on your tastes, kick it up with an extra spicy sauce or more of it, or tone it down with a mild sauce or less of it.
There are so many ways to do the “ranch seasoning,” but my absolute favorite is Flavor God Ranch Seasoning. But a close second is Definitely a Hidden Valley Ranch Seasoning (dip or dressing). If you don’t feel like buying a special ranch seasoning, you can absolute make your own version. Just mix garlic powder, onion powder, dried parsley, dill, salt and pepper.
Serving it
There are truly so many ways this Buffalo Chicken Salad can be eaten. There is a traditional sandwich, served cold on bread. But this is also amazing served cold with celery and carrots for dipping. You can take it to a new level by spreading it through some regular rolls or Hawaiian rolls for the ultimate sweet and spicy sliders. One of my favorite ways for a light yummy snacks it to serve it on lettuce wraps. Honestly, you could really just eat it with a fork! There really is no wrong way to eat something this yummy.

Buffalo Chicken Salad
Ingredients
- 2 cooked chicken breasts cooled and shredded or chopped
- 1/3 cup sour cream
- 1/3 cup buffalo wing sauce
- 2-3 stalks celery finely chopped
- 1 tbsp ranch seasoning
- 1/4 cup blue cheese crumbles optional
Instructions
- Chop or shred the cooked and cooled chicken. Using a hand mixer can quickly shred the chicken.
- Chop the celery stalks into a small dice.
- Mix together all ingredients until well combined.
- Serve and enjoy!
