This post is all about the ultimate loaded chicken salad recipe.
This play on chicken salad come “loaded” with all your favorite toppings. Whether its a baked potato or a pile of fries, anything is made better by loading it up with bacon, green onion, sour cream and cheese. This recipe does just that with a classic chicken salad!

The Chicken
First and foremost, the chicken. There are loads of way you can cook the chicken. Use leftovers from last nights grilled chicken, buy a rotisserie chicken and pick off the meat, or simply boil chicken breasts. As long as it is fully cooked and cooled, you are good to go.
The Mix-ins
The bacon is next. My only advice here is make sure its crispy! When the bacon is incorporated in with the other ingredients it’ll lose a little bit of its crunch, so I like to make it as crisp as possible (without being burnt) before hand. Fry it up in a pan, bake it in the oven, or use pre cooked bacon and crisp it up in the microwave. Once it is cooked and cool, chop it up into chunks.
For the cheese, I use a medium cheddar block and grate it on a box grater. Store bought bagged can definitely work in a pinch, but nothing beats freshly grated.
For the green onions, slice finely so it is evenly distributed throughout the mixture.
The spread
To get the traditional chicken salad flavor, mayo is the way to go. For this recipe it has both mayo and sour cream for the “loaded” flavor and a little bit of tang. Feel free to do more of one than the other depending on your tastes.
Then its as simple as mixing all the ingredients together, chilling and service on your favorite bread, crackers, lettuce wraps, or even just a spoon!
Don’t be afraid to experiment with other ingredients as well, like jalapeño for a kick!
Loaded Chicken Salad
Ingredients
- 2 chicken breasts cooked
- 6-8 bacon slices cooked crispy
- 1-2 tbsp green onions finely sliced
- 1/4 cup mayo
- 1/4 cup sour cream
- 1/2 cup cheddar cheese grated
- 1/2 tsp garlic powder
- salt to taste
- pepper to taste
Instructions
- Start by cooking the chicken breast by your desired method. Boiling, grilling or using a rotisserie chicken will all work. For boiled: add chicken to water in a saucepan and bring to a boil. Boil for about 15 minutes or until cooked through. Once the chicken is cooked, set aside and let cool completely.
- Cook the bacon until crispy, or use pre-cooked bacon. Chop the bacon up into pieces, set aside.
- Combine the cooled chicken, bacon, green onion, grated cheddar, mayo, sour cream, garlic powder and salt and pepper in a bowl.
- Chill in the fridge and serve!
