Start by cooking the chicken breast by your desired method. Boiling, grilling or using a rotisserie chicken will all work. For boiled: add chicken to water in a saucepan and bring to a boil. Boil for about 15 minutes or until cooked through. Once the chicken is cooked, set aside and let cool completely.
Cook the bacon until crispy, or use pre-cooked bacon. Chop the bacon up into pieces, set aside.
Combine the cooled chicken, bacon, green onion, grated cheddar, mayo, sour cream, garlic powder and salt and pepper in a bowl.
Chill in the fridge and serve!
