If using a mortar and pestle, grind up the garlic clove, basil and parsley together until it creates a paste. Otherwise, mince the three until very fine. This can also be made in a food processor.
In a tight sealed jar, mix the garlic/basil/parsley mixture with the balsamic, dijon mustard, honey, salt and pepper and shake vigorously.
Add in the olive oil and shake again. Or if using a food processor, stream in olive oil as you mix.
