Carrot Cake

Ingredients
  

  • 3 cups grated carrots
  • 2 cups granulated sugar
  • 1 1/2 cups cooking oil like vegetable, canola, avocado
  • 4 eggs
  • 2 cups flour all purpose
  • 3 tsp ground cinnamon
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup pecans chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix the sugar and oil together in a bowl.
  • Add in the eggs and beat well.
  • Add in the dry ingredients and mix to combine.
  • Fold in the chopped nuts and carrots.
  • Pour the batter into a greased an floured pan. Use either a 9x13 for a sheet cake or two 8 inch round cake pans for a layer cake.
  • Bake for about 40 minutes. Check the center of the cakes with a toothpick until they come out clean.
  • Remove from the oven and place on a cooling rack. Allow to cool completely before attempting to remove them from the pans.
  • Once completely cooled, top with the cream cheese frosting (recipe below).
