Egg Salad Tea Sandwich

Ingredients
  

  • 2 Eggs hardboiled
  • 2-3 tbsp Mayonaise
  • 1 tsp Dijon Mustard
  • 1 tsp Yellow Mustard
  • Salt to taste
  • Pepper to taste

Instructions
 

  • First, hardboil your eggs by placing the eggs in a medium pot with cold water. Bring the water to a boil, cover the pot and remove from the heat. Let the eggs sit for about 12-15 minutes. Once the time is up, add the eggs to ice water to stop the cooking process. Allow the eggs to cool fully before removing the shells.
  • Once the eggs are peeled, chop or grate the eggs into a bowl*.
  • Add in the mayo and mustards and mix well. Add salt and pepper to taste.
  • Once it is all well incorporated, spread evenly on the sandwich bread. Wrap and chill in the refrigerator. Once it has chilled, cut off the crusts and cut into 2 or 3 rectangles.
  • Serve and enjoy!

Notes

*I prefer to use a box grater.
