First, hardboil your eggs by placing the eggs in a medium pot with cold water. Bring the water to a boil, cover the pot and remove from the heat. Let the eggs sit for about 12-15 minutes. Once the time is up, add the eggs to ice water to stop the cooking process. Allow the eggs to cool fully before removing the shells.
Once the eggs are peeled, chop or grate the eggs into a bowl*.
Add in the mayo and mustards and mix well. Add salt and pepper to taste.
Once it is all well incorporated, spread evenly on the sandwich bread. Wrap and chill in the refrigerator. Once it has chilled, cut off the crusts and cut into 2 or 3 rectangles.
