Cut the bread into 1-2 inch cubes and allow to sit out to dry out for a couple hours.
Preheat oven to 350 degrees.
Spray or grease a 9x13 inch baking dish. Line the bottom with the cubed bread. There should be overlap, not just an even layer.
Whisk together the eggs, cream, cinnamon, and a 1/4 cup of maple syrup.
Pour the egg mixture all over the bread. Make sure to hit the whole surface areas of the bread pieces. But the mixture should not fully submerge the bread.
Mix together the chopped pecans, brown sugar and butter by hand until it forms a crumble like texture and is fully incorporated. Sprinkle the mixture over the top of the casserole.
Bake covered for about 30 minutes, remove the foil and bake for another 10-15 minutes until the tops has some crispy bits.
Remove and drizzle with the remaining maple syrup. Serve and enjoy!
