Egg Salad
I think egg salad can be controversial for some, but I think it is so sneaky delicious. Plus, there are so many different ways to make it and dress it up according to your taste! Below, I have a very traditional egg salad that is sure the be a crowd pleaser for your tea party!
Egg Salad Tea Sandwich
Ingredients
- 2 Eggs hardboiled
- 2-3 tbsp Mayonaise
- 1 tsp Dijon Mustard
- 1 tsp Yellow Mustard
- Salt to taste
- Pepper to taste
Instructions
- First, hardboil your eggs by placing the eggs in a medium pot with cold water. Bring the water to a boil, cover the pot and remove from the heat. Let the eggs sit for about 12-15 minutes. Once the time is up, add the eggs to ice water to stop the cooking process. Allow the eggs to cool fully before removing the shells.
- Once the eggs are peeled, chop or grate the eggs into a bowl*.
- Add in the mayo and mustards and mix well. Add salt and pepper to taste.
- Once it is all well incorporated, spread evenly on the sandwich bread. Wrap and chill in the refrigerator. Once it has chilled, cut off the crusts and cut into 2 or 3 rectangles.
- Serve and enjoy!

Coronation Chicken Salad
This recipe is the most complex, but it is also one of the traditional English sandwiches that brings some much needed spice to the tea sandwich options! Named for the Queen Elizabeth II of England’s coronation luncheon, this chicken salad has a curry spice kick that makes it extra delicious. There are many different versions of this recipe out there, but this is my version!
Coronation Chicken Salad Tea Sandwich
Ingredients
- 1/2 Shallot finely chopped (about 1 tbsp)
- 1 tbsp Olive Oil
- 1 tsp Curry Powder
- 1 tsp Tomato Paste
- 2 tbsp Red Wine or Sweet Vermouth
- 2 tbsp Water
- 1 tbsp Lemon Juice fresh squeezed
- 3 tbsp Mayonaise
- 2 tbsp Creme Fraiche
- Salt to taste
- Pepper to taste
- 1 Chicken Breast cooked, chopped (about 2 cups)
- 1/3 cup Dried Apricots petit diced
- 1/3 cup Slivered Almonds
- 4-6 Slices Sandwich Bread or Mini Croissant Rolls
Instructions
- Finely chop half of a shallot, should yield about 1 tablespoon.
- Add the olive oil to a small sauté pan over medium heat. Add in the shallot and the curry powder and cook for about 2 minutes (be sure not to let it burn).
- Then add in the red wine/vermouth, water and tomato paste. Bring it to a boil and then let it simmer for a few minutes to reduce.
- Then add in the squeeze of lemon juice and simmer for another moment longer.
- Once the sauce has reduced, strain it over a sieve to smooth out the sauce. Then take the strained sauce and mix it with the mayonnaise, creme fraiche, and salt and pepper.
- Add the sauce mixture to the chopped chicken, apricots and almonds and mix thoroughly.
- Serve on your favorite bread, croissant, or even lettuce wrap. Enjoy!
Cucumber Sandwich
This sandwich is simple and so delicious. It’s perfect for any vegetarian guest, but will be enjoyed by all! To make the sandwiches that much more delicate, I recommend peeling the cucumbers and slicing them thin. Once you have all your thin slices, you are able to layer them evenly. This is the perfect light and refreshing tea sandwich.
Cucumber Tea Sandwich
Ingredients
- 4 slices Sandwich Bread
- 1/2 English cucumber
- 2 tbsp Mayonaise
- 1 tbsp Cream Cheese softened
- Salt
- Pepper
Instructions
- Mix together the cream cheese and mayo. Once it is thoroughly mixed, spread a thin even layer inside the sandwich bread.
- Peel the cucumber and slice thinly. Lay the slices on a paper towel or rag to absorb some of the excess moisture. Then, layer the cucumber onto the bread.
- Salt and pepper the top of the cucumber layer and then put the remaining bread on top.
- Wrap and chill in the fridge before cutting. Once it has chilled, cut off the crusts and cut into 2 or 3 rectangles, or triangles.
- Serve and enjoy!
Cream Cheese and Olive Sandwich
This recipe isn’t a conventional tea sandwich, but I grew up eating these sandwiches and I think they make a perfect addition. When we were kids (and still to this day) we would eat these sandwiches in a pinch and they were always surprisingly good. It’s the perfect combo of creamy, acidic and salty.
Cream Cheese and Olive Tea Sandwich
Ingredients
- 4 slices Sandwich Bread
- 4 tbsp Cream Cheese softened
- 1/4 cup Green Olives slices
Instructions
- Mix together the cream cheese and olives.
- Spread between slices of bread.
- Wrap and chill in the fridge until ready to serve.
- Slice into 2-3 rectangles and serve!
Enjoy!
